I've looked through your sketches and options for the space and tried to come up with some new options that you yet haven't explored. (P.S. you would make a great architect :) )
I aimed to keep the construction changes to a minimum and keep the bathrooms fixtures in the same area as they currently are. You had also expressed some doubts about the large entrance hall that should be exploited and everything being highly functional and practical, and I hope I've managed to answer all your needs.
I have divided the proposal into 2 options for the living area and two options for the bedrooms and made combinations of them to create 4 layouts: 1 & 2 differ in the living area layout and A & B differ in the bedroom layout.
In the first option for the living area, the kitchen is kept in the current position minimizing additional work being done with installations. The kitchen is organized in two lines, the back one equipped with a fridge, oven, microwave, hob, and the front line as a peninsula with a sink. The peninsula could have additional seats if preferred or needed. The dining is placed in front of the peninsula with enough space to turn the table (180x90) either way and further extend it. The lounge is placed in the inner corner with an L-sofa and low cabinet with tv and fireplace.
This layout is shown in the renderings.
The materials and colors are mainly neutral with dark accents and a mood that refers to the reference images you uploaded while scaling down with the heavy wood paneling as you requested but still keeping a cozy vibe to the space.
The ceilings are quite low to add any beams or suspended ceiling, and therefore it's kept simple.
The second option for the living space is having the lounge visible as you enter the apartment and the kitchen by the bottom bedroom and dining space in a similar position as in the previous option.
In the option shown in the renderings, the master bedroom is placed to the right as you enter the apartment, and the second bedroom straight forward.
The little corridor by the master bedroom and bathroom is enclosed. This reduces the number of doors and opens up the space as you enter the room from the main entrance hall. On the right, a small laundry area in a built-in wardrobe next to the en-suite bathroom is close enough to the bathroom to make the additional installations needed. The bathroom layout is kept as was, just redesigned. The bedroom is furnished with a large wardrobe and vanity/work desk and a king-size bed with nightstands on the sides.
The second bedroom is furnished with two single beds facing each other on separate ends of the room. On one side of the room, the whole wall is a wardrobe area, by the bed and above the bed. (Visible in rendering)
In this layout, the bathroom is accessed from the entrance hall and extended towards it by having a large walk-in shower at the entrance of the bathroom and a large double sink and toilet and bidet in the main space of the bathroom.
The second layout for the bedrooms is with the master bedroom having a walk-in wardrobe and a small en-suite bathroom accessed straight from the entrance hall.
The second bedroom is to the right of the entrance. The laundry area and bathroom are kept as in the first option with the exception of closing it from the hallway. The room itself is accessed as it currently is and the two beds are placed in a parallel order with a wardrobe on the wall behind the beds and a small desk by the window.
I find that both options are equally functional and the choice mainly depends on the level of work you would like to do in order to make the needed changes with installations, masonry, and similar.
